Waffled Patty Melts

Ingredients

1 tbsp butter

450g onions, thinly sliced

450g 80% lean beef mince

80ml mayonnaise

2 tbsp Dijon mustard

8 slices sourdough or rye bread

8 slices Swiss cheese

Method

Step 1

Preheat oven to 95°C. Place a wire rack over a large sheet pan and place pan in oven.

In large induction-friendly frying pan on the Inducto Go Portable Induction Cooktop, melt 1 tbsp butter over a medium-high heat. Add onions and cook, stirring often, for 15 minutes, or until golden. Stir in 1 tbsp water. Season with salt and pepper. Transfer to plate. Wipe out pan.

Step 2

Divide beef into 4 balls. Press into round patties that are 13cm wide and about 6mm thick. Sprinkle with salt.

Heat large skillet over medium-high heat. Working in batches, cook patties 2 minutes per side, or until browned but still pink in centre. Transfer to plate.

Step 3

Meanwhile, remove side handles from Fill N’ Flip Waffle Press and preheat for 10 minutes.

Step 4

In small bowl, whisk mayonnaise and mustard; spread heaped 1 tsp mayonnaise mixture over both sides of each bread slice.

Step 5

Top each of 4 bread slices with 1 cheese slice then 1 cooked patty. Spoon onions over patties. Top with remaining cheese slices and remaining bread slices. Press sandwiches to flatten slightly.

Step 6

Place one patty melt in waffle maker. Close lid and cook for 6 minutes, or until toasted and cheese has melted.

Step 7

Carefully remove patty melt and transfer to oven to keep warm while preparing more patty melts.
