Zucchini and Squash Pizza

Ingredients

1/3 cup thickened cream

75g whole milk ricotta

3 x 225g balls Homemade Pizza Dough, or store-bought dough

1 1/2 cups shredded mozzarella cheese

1 zucchini, thinly sliced

1 yellow squash, thinly sliced

6 squash blossoms (optional)

1/2 cup fresh basil leaves

Freshly ground black pepper, to taste

Extra-virgin olive oil, for drizzling

MAKE AHEAD:

Ricotta mixture can be made up to 1 day ahead, covered and refrigerated.



Method

Step 1

Preheat the Slice Master Pizza Oven to THIN CRUST and set TIME to 10 minutes. Preheat the oven.

Step 2

In a small bowl, whisk cream and ricotta until smooth. Season with salt and pepper.

Step 3

Stretch out one dough ball with floured hands, or roll it out on a floured work surface, until it is about a 30cm x 20cm oval. Dust a pizza paddle with flour and place dough on the paddle.

Step 4

Spread 1/4 cup ricotta mixture over dough. Top with 1/2 cup mozzarella, then one-third of each zucchini, yellow squash, and squash blossoms, if using.

Step 5

Carefully slide pizza off peel and into a hot pizza oven. Bake pizza for 10 minutes, rotating halfway through baking, or until the crust is crisp and golden brown on bottom and cheese has melted. Transfer pizza to a cutting board and cool slightly.

Step 6

Sprinkle fresh basil leaves and pepper over pizza. Drizzle oil over. Using a pizza cutter or large knife, cut pizza into square wedges and serve. Repeat to make remaining pizzas.
