Jalapeño Cornbread and Chilli Waffles

Ingredients

125g plain flour

155g yellow cornmeal

2 tbsp sugar

2 tsp baking powder

1 tsp bicarbonate of soda

1 tsp kosher salt

375ml buttermilk

2 large eggs

115g unsalted butter, melted and cooled

210g fresh yellow corn kernels, from about 2 corn cobs

2 jalapeños, seeded, finely chopped

Nonstick cooking spray

500ml chilli, warmed

Accompaniments: shredded cheddar cheese, sour cream and sliced spring onions

Method

Step 1

Preheat oven to 95°C. Place wire rack over large sheet pan and place pan in oven.

Step 2

In medium bowl, whisk flour, cornmeal, sugar, baking powder, bicarbonate of soda, and salt.

Step 3

In another medium bowl using the Beat Blitz Hand Mixer Set, whisk buttermilk, eggs, and butter. Stir buttermilk mixture into flour mixture until just incorporated. Fold in corn and jalapeño.

Step 4

Preheat Fill N’ Flip Waffle Press for 3 minutes, or until green ready light turns on.

Step 5

Lightly spray lower and upper plates with cooking spray. Pour 125ml batter into lower plate. Top with 125ml chilli then another 80ml batter.

Step 6

Close lid and cook waffle for 8 minutes, or until golden. Carefully remove waffle and transfer to oven to keep warm while preparing more waffles.

Step 7

Serve waffles with shredded cheese, sour cream, and sliced spring onions.
