Citrus Ricotta Waffles with Tangerine Suzette Sauce

Ingredients

250g full cream ricotta

2 tbsp icing sugar

1 tbsp lemon zest

Nonstick cooking spray

Sweet Classic Waffle Batter

160ml fresh tangerine juice, from about 6 tangerines

100g white sugar

60ml Grand Marnier, or other orange liqueur

5 tbsp unsalted butter, diced

4 tangerines, peeled, sliced crosswise

Method

Step 1

Preheat oven to 95°C. Place wire rack over large sheet pan and place pan in oven.

Step 2

Preheat Fill N’ Flip Waffle Press for 3 minutes, or until green ready light turns on.

Step 3

In medium bowl, stir ricotta, icing sugar, and lemon zest.

Step 4

Lightly spray lower and upper plates with cooking spray. Pour 125ml batter into lower plate. Top with 60ml ricotta filling then another 80ml batter.

Close lid and cook waffle for 8 minutes, or until golden. Carefully remove waffle and transfer to oven to keep warm while preparing more waffles.

Step 6

Meanwhile, in an induction-friendly frypan on the Inducto Go Portable Induction Cooktop over medium heat, bring juice, sugar, and liqueur to simmer. Add butter one piece at time, whisking until incorporated before adding more. Stir in pinch of salt and continue simmering for 5 minutes, or until sauce thickens to syrup consistency. Stir tangerine slices into sauce. Keep sauce warm.

Step 7

Spoon suzette sauce over waffles and serve.
