Veggie Flatbread Sandwich Recipe

Ingredients

170g fetta cheese

1/2 cup plain Greek yoghurt

4 purchased naan, halved

1/4 Lebanese cucumber, thinly sliced

1/2 small red onion, thinly sliced

1 avocado, halved, pitted, peeled, and sliced

1 tomato, sliced

1/3 cup fresh mint leaves, coarsely torn

1 lemon

Description

WITH FETTA - YOGHURT SAUCE

MAKE AHEAD:
Fetta-yoghurt sauce can be made up to 5 days ahead, covered, and refrigerated.



Method

Step 1

In a food processor, combine fetta and yoghurt and process until smooth and creamy. Season with salt and pepper. Add two naan halves to your Toast IQ digital toaster and set the timer to setting 2 so just warmed through.

Step 2

Spread fetta-yoghurt sauce over one side of warmed naan. Arrange the cucumber, onion, avocado, and tomato slices over one naan. Season with salt and pepper. Top with mint. Finely grate some lemon zest over filling and then halve the lemon and squeeze some juice over. Top with another naan. Cut sandwiches in half if desired, and serve.
