Seared Pepper Steaks with Red Wine Sauce

Ingredients

1 tbsp black peppercorns, very coarsely ground 

Six 170g centre-cut beef tenderloin steaks (about 3.75-cm-thick) 

1 tbsp grapeseed oil 

3/4 cup dry red wine, such as Cabernet Sauvignon

Method

Step 1

To cook steaks:

Season both sides of steaks generously with salt and sprinkle coarsely crushed peppercorns over both sides of steaks, patting to adhere. 

Step 2

Set a pan on the Inducto Go and heatonhigh heat. Add oil and swirl to coat pan. Add steaks. Cook steaks for 4 minutes per side or until an instant-read thermometer inserted horizontally into centre of steak reads 55°C for medium-rare.

Step 3

Add wine to pan and simmer 30 seconds. Transfer steaks to cutting board and let rest. Continue simmering wine for 4 minutes, or until reduced to 1/4 cup.

Step 4

To serve:

Slice steaks across grain and arrangesteak slices on plate. Drizzle withred wine sauce and any accumulated juices from steaks.
