Red Velvet Cake Waffles

Ingredients

Waffles:

Nonstick cooking spray

2 cups red velvet cake batter

2 cups vanilla cake batter

115g cream cheese, softened

1/2 cup icing sugar, sifted

1 teaspoon salt

1 tsp pure vanilla extract

1/4 cup full cream milk

Raspberry Whipped Cream

(see recipe)

Fresh berries, for serving

Raspberry Whipped Cream:

3/4 cup chilled thickened

cream

1/2 cup fresh raspberries

1/4 cup icing sugar

Method

Step 1

To make waffles:

Preheat the Stuffed Waffle Maker. Place wire rack over large baking tray.

Step 2

Lightly spray lower and upper plates with cooking spray. Pour 1/4 cup red velvet cake batter into lower plate in a zig-zag pattern. Top with 1/2 cup of vanilla cake batter then another 1/4 cup red velvet cake batter in a zig zag pattern.

Step 3

Close lid and cook waffle for 8 minutes, or until golden. Carefully remove waffle and transfer to wire rack to cool while preparing more waffles.

Step 4

Meanwhile, in Electric Mini Chopper, blend cream cheese, sugar, vanilla, and pinch of salt until smooth. Slowly add in milk and blend glaze until smooth.

Step 5

Drizzle glaze over waffles and serve with raspberry whipped cream and fresh berries.

Step 6

To make raspberry whipped cream:

In the Electric Mini Chopper, use Creamer disk,and beat cream, raspberries, and sugar until berries fall apart and mixture is thick and fluffy.
