Mash Potato Recipe

Ingredients

5 large sebago potatoes (about 2.25kg total), peeled, each cut into 6 chunks.

3 garlic cloves, peeled

1 cup full cream milk, warmed

185g butter, room temperature

1 tsp finely chopped fresh thyme

3 tsp finely chopped fresh flat-leaf parsley

Description

These potatoes are best eaten as soon as they are made.



Method

Step 1

Place large pot of salted water on your Inducto Go Portable Induction Cooktop. Using high power, bring water to boil. Add potatoes and garlic cloves and cook for 25 minutes, or until potatoes are soft. Strain potatoes and garlic into colander and set colander over pot in which they were cooked. Let stand for 5 minutes to allow potatoes to steam dry.

Step 2

Working in batches, press potatoes through potato ricer and into same pot. Stir in milk, butter, and herbs. Season with salt and pepper. Using PAN TEMP mode, set TEMPERATURE to 50°C to keep potatoes warm.
