Green Goddess Dressing Recipe

Ingredients

1 anchovy fillet

1 garlic clove, peeled

2 bunches baby watercress, leaves only

1/2 cup flat-leaf parsley leaves

1/4 cup chopped fresh chives

1 1/2 tablespoons fresh tarragon leaves

1 large egg yolk Juice of 1 lemon (or more)

1 1/4 cups grapeseed oil

Salt and freshly ground black pepper

MAKE AHEAD:

The dressing can be made up to 2 days ahead, covered and refrigerated.



Method

Step 1

Place anchovy, garlic, watercress, herbs and 3/4 cup of grapeseed oil into jar or mixing jug. Using the Beat Blitz immersion blender, mix on high speed for 1 minute or until blended.

Step 2

In a separate jar or mixing jug, add egg yolk and lemon juice and blitz using the Beat Blitz immersion blender for 1 minute. Drizzle in the remaining 1/2 cup of grapeseed oil and blitz.

Step 3

Add the herb puree to the egg, lemon mixture and blend until smooth. Season the dressing to taste with salt and pepper and, if necessary, more lemon juice.
