Garlic Mayonnaise (Aïoli)

Ingredients

2 small garlic cloves
 

2 tbsp Dijon mustard
 

1/4 cup fresh lemon juice
 

3 large egg yolks
 

1 1/2 cups grapeseed oil
 

1/2 cup olive oil (not extra-virgin)

Make-Ahead: Mayonnaise will last up to 4 days, covered and refrigerated.

Method

Step 1

In large jar, combine garlic, Dijon, lemon juice, and egg yolks. Using the Beat Blitz, blend on low speed until smooth. 

Step 2

With motor running, slowly add oils, processing until mixture is emulsified and creamy. Add warm water as needed to thin mayonnaise to desired consistency. Season with salt.
