Couscous with Pine Nuts and Raisins

Ingredients

2 cups filtered water 

Large pinch of saffron threads, crumbled (optional) 

285g plain couscous 

1/4 cup raisins 

1/4 cup pine nuts, toasted

Method

Step 1

Bring water, saffron, if using, and 1 tsp salt to boil in the Boil IQ.

Step 2

Pour hot water over couscous and raisins in large heat safe bowl and stir to blend.Cover bowl tightly with cling film andlet stand for about 5 minutes, or until liquid is absorbed and couscous is tender. 

Step 3

Fluff couscous with fork and mix in pine nuts. Season with salt and pepper and serve.
