450g day-old French or Italian bread loaf

2 1/2 cups thickened cream

1 1/4 cups full-cream milk

1 1/4 cups packed light brown sugar

5 large eggs

1 1/2 tsp pure vanilla extract

1 tbs unsalted butter, at room temperature

225g semisweet chocolate, coarsely chopped

1 tbs caster

sugar

Method

Step 1

Using the Cordless Carve, cut bread into 2.5-cm cubes (about 12 cups).

Step 2

In large bowl, whisk cream, milk, brown sugar, eggs, and vanilla together. Add cubed bread and gently stir to coat well. Set aside for 20 minutes to allow bread to soften and soak up some of egg mixture.

Step 3

Position rack in centre of oven and preheat oven to 175°C (155°C fan-forced). Coat 33x22-cm baking dish with butter.

Step 4

Fold chocolate into bread mixture. Transfer to prepared baking dish and sprinkle with caster sugar. Bake for 50 minutes, or until pudding puffs and is golden brown on top but still moist inside. Cool slightly before serving.
