Burgers with Bourbon Onions and Rocket

Ingredients

15g unsalted butter 

500g brown onions, peeled, thinly sliced 

1 tbsp Bourbon whiskey  

1 tbsp light brown sugar 

500g 3 star beef mince  

4 slices Muenster cheese 

1/3 cup mayonnaise  

1 tbsp Dijon mustard 

4 hamburger buns, toasted 

1 1/2 cups (not packed) baby rocket leaves

Make-Ahead: Onions can be cooked up to 2 days ahead, cooled, covered and refrigerated. Rewarm onions, covered, over medium-low heat before using.

Method

Step 1

Set a pan on the Inducto Go and heat on medium-high heat. Add butter and onions and cook, stirring often, for 15 minutes, or until caramelised and tender. Stir in whiskey and sugar. Season with salt and pepper. Transfer onions to bowl, cover and keep warm.

Step 2

Wipe out pan and heat pan on high heat. Divide beef mince into 4 equal patties that are slightly wider than buns. Season with salt and pepper. Cook patties for 3 minutes, or until caramelised. Flip over and top patties with cheese. Cover pan and cook 2 to 3 minutes for medium-rare doneness. Set patties aside to rest.

Step 3

In small bowl, whisk mayonnaise and mustard. Spread cut sides of buns with mayonnaise mixture and mound rocket on bottom halves. Top bottom buns with patties, followed by onions. Cover with bun tops and serve.
