Brekky Bagel Sandwich Recipe

Ingredients

1/4 cup mayonnaise

1 tbs sriracha

2 tsp canola oil

4 slices capocollo

4 slices Genoa salami

4 slices smoked ham

1 tbs unsalted butter

2 seeded bagels, split

2 slices prosciutto

2 eggs

MAKE AHEAD:

Sauce can be made up to 3 days ahead, cooled, covered, and refrigerated.



Method

Step 1

In a small bowl, mix mayonnaise and sriracha until smooth. Set spicy mayonnaise aside. In a large skillet, heat oil over medium-high heat. Working in batches, cook capocollo, salami, and ham for 2 minutes per side, or until edges are crisp. Transfer meat to plate.

Step 2

Add two bagel halves to your Toast IQ digital toaster and set your Toast IQ to setting 4 for a golden brown result. Repeat with second bagel. Spread spicy mayonnaise over toasted bagel halves. Place half of the cooked meat and prosciutto onto each of the bottom halves.

Step 3

Meanwhile, in a medium heavy nonstick skillet, melt butter over medium heat. Crack the eggs into a pan and cook for 3 minutes, or until the egg whites have set and the yolks have thickened but not set.

Step 4

Top each sandwich with an egg. Place the top halves of the bagels on top and serve immediately.
